Andrew and I made our very own Vietnamese style sandwiches the other day, it was really easy and they were a huge success. We simply pan-fried some extra-firm sliced tofu in a tiny bit of vegetable oil, added sriracha sauce, oyster sauce, and a tiny splash of soy sauce. We then topped a french baguette with the tofu and a touch of mayo, and finished it off by adding fresh cilantro, shredded carrots, jicama, lime juice, and onion. We saw that most of the recipes called for pickled carrots, and cucumber, but we went without pickling the carrots, and used jicama instead of cucumber -it was just as good. We'll probably try doing it the other way next time, but until then, I recommend you do it this way, they were so tasty!
